Specifying how you want your quarter processed

This page is designed to help you determine how you want your meat processed. 

If you have not ordered a quarter before this can seem confusing but this page will simplify it for you.  If this is your first time we recommend just getting one of our standard processing options.  Then next time you can make a few changes if you would like.  You can also call the butcher and start from scratch to get custom processing fit to your needs.  If you do not order one of our standard cuts you can also find information below that will be beneficial to look over before calling to specify custom processing.

 

Standard Processing Options

When you call the butcher if you just tell them you want the "HottBeef House Cut" or the "HottBeef Strips & Fillets" they will know exactly how you want your processing.  You will not need to say anything else.  However, you can also mention these as a starting point then just make a few adjustments to them as you desire.

"HottBeef House Cut"

This is will be all of the basic and most common cuts.  This is generally how most people will have a quarter processed.

"HottBeef Strips & Fillets"

This is will be all of the basic and most common cuts with an emphasis on more steaks included in strips and fillets.

Custom Processing Options

If you do not want one of these standard processing options feel free to call the butcher and start from scratch.  Below is the list of questions that they will ask you when you call.  You can review these ahead of time so you know what to expect.  We got these from the butcher so it should be accurate.

Calling the Butcher to specify Processing

 

How many steaks would you like in each package?

How much would you like each roast to weigh?

Do you want Rib Steaks?  (Or if you would like Ribeyes they will remove the bone.)

Do you want Rib Roast?  (This will take some of your steaks.)

Do you want your round steaks tenderized? (No extra charge)

Do you want Soup Bones?

Do you want Liver?

How many pounds of Stew Meat would you like?

How do you want your Hamburger packaged?  (1 lb, 1.5 lb, or 2 lb packages.)

  Your Hamburger can be formed into patties for an additional charge. (about 30 cents/lb)

 

We generally use Shreve Meats as our butcher.
